We’ve had some pretty chilly days this winter and our Educators and Children at Aurora have been talking about the importance of staying warm. As well as piling on the jackets, mittens and hats, it’s also Important to eat Warming Nourishing Food.

Is there anything more nourishing than chicken soup? Try this Chicken soup recipe as an appetiser for a family meal; it’s super quick and will help boost your little one’s immunity.

Ingredients:

55 grams butter
2 onions, sliced
2 spring onions, sliced
2 sticks celery, finely chopped
2 carrots, finely diced
25 grams cornflour
2 pints chicken stock
450 grams boiled chicken, shredded
1 tbsp fresh parsley, chopped
Salt and freshly ground black pepper

Directions:

Melt the butter in a deep dish and saute the onions, spring onions, carrots and celery for two minutes.
Stir in the cornflour and saute for two minutes and then add the chicken stock.
Bring to boil and then allow to simmer for ten minutes.
Add the Cooked Chicken and cook for two more minutes.
Garnish the the parsley.
Serve!
