Ingredients:

2 cups buckwheat flour
1 cup rolled oats
¼ cup honey
2 eggs
¾ cup Greek yogurt
2 ripe bananas, mashed
½ cup fresh berries
¼ cup olive oil
1 tsp ground cinnamon
½ tsp vanilla essence
½ tsp bicarbonate soda

Directions:

Preheat your oven to 180C
Combine all the dry ingredients together and mix the wet ingredients in a seperate bowl.
Mix the bananas and berries together
Stir the wet mixture into the dry mixture and then stir in the mashed bananas and berries.
Grease a muffin tray with olive oil.
Pour the batter into the muffin tray.
Bake in the oven for 25 minutes
Store in an airtight container.
Remove to wire racks to cool.
